- Sweet Pizza Dough Use brown sugar instead of the normal one, double the portion.
- Sweet Meat Lovers Pizza / Pizza Dulce de Carne Instead of using a random pizza sauce, make your own: fry 1/2 onion and 4 garlic cloves in a small pot, add a can of tomatoes (smash them to make a semi-purée if they're too big), half a cup of red wine, 4 tbsp of brown sugar, a pinch of cinnamon powder, a pinch of black pepper, a pinch of oregano, 2-3 cloves, 2-3 bay leaves, a sprig of rosemary, 1/2 a cupped hand of fresh basil leaves. Make it boil, then lower the fire and cook it for 8-10 mins. It should have a non-acid, bland, but sweet tomate-y/basily taste; add salt to taste (1/3 tbsp for me). Let it cool before use (don't forget to remove the bay leaves and rosemary!). If you're using ground beef (~250g), here's an easy twist: fry it with 1/2 tbsp of butter, add 1/2 tbsp of mustard, 1tbsp of soju, 1 tbsp of Worcestershire sauce, 1 egg yolk. Feel free to experiment with the toppings; I added slices of flavored sausage (linguiça com pimenta binquinho), bacon and Chilean/Kalamata olives. I used queijo prato. When mounting the pizza, I stuffed the crust with cheese and basil leaves. I ended up pairing it with a super random Cabernet, but felt this recipe deserved more (next time, I guess!).

- Lemon Pepper Fish Use curry instead of creole seasoning. A third of a small chile de árbol with seeds instead of cayenne. Add ginger to the marinade for a more interesting flavor. Use way less butter (3 tbsp tops for everything), fresh parsley and orange slices for the baking part. Garnish with finely-chopped parsley, dried damascus and walnut.
